Homemade Smoky Bacon Onion Neufchâtel Cheese

I have received several requests for the recipe for the flavored cheese that we gave people for Christmas. So I decided to post it here.
Just a couple of notes: I did not actually use a recipe to flavor the cheese. I just made it up as I went. I tried to remember and write down the ingredients here. So I hope I got it right. If you don't want to attempt actually making the cheese -- store-bought cream cheese will suffice. Although I must say, it probably will not taste nearly as good.


Neufchâtel Cheese


Ingredients:

2 gallons whole milk
½ cup cultured buttermilk
½ tablet Rennet dissolved in ¼ cup cold water

½ teaspoon calcium chloride dissolved in ¼ cup cold water [if using store-bought milk—helps to restore the calcium balance that is destroyed in  pasteurized milk which helps with curd formation]

 
Directions:

1. Sterilize a large stainless steel pot with lid by boiling a small amount of water for five minutes.

2 . Add 2 gallons of whole milk

3. Add dissolved ½ teaspoon calcium chloride-- stir well

4. Add ½ cup cultured buttermilk-- stir well

5. Warm while stirring to 65°F [we usually omit this step because it will be sitting at room temperature all night anyway]

6. Add dissolved ½ tablet Rennet -- stir well using top to bottom motion.

7. Cover and let sit undisturbed overnight at room temperature (65-70°F)

8. The next morning a soft curd should have formed. If not, let sit for another 12 hours. You should get a clean break. Slice into ½ inch cubes.

9. Line a colander with a flour sack towel. Pour the curds and whey into lined colander.

10. Gather the four corners of the cloth. Tie the corners together on a wooden spoon. Place the wooden spoon between #10 cans to suspend curds and allow whey to drip into a bowl. Let hang overnight.

11. Sprinkle approximately 1 Tablespoon of salt, according to taste,  on cheese. mix the salt in thoroughly. Store covered in refrigerator until use.

12. Cheese can be molded before refrigerating. Or, seasonings can be added to make cheese balls.

 
Tammy’s Smoky Bacon Onion Cheese


Ingredients:

Freshly made cheese from recipe above [store-bought cream cheese can be substituted]
1 teaspoon powdered smoke flavoring
1 teaspoon garlic powder
1 teaspoon onion salt
1 Tablespoon Worcestershire sauce
1 Tablespoon dried chives
¼ cup dried onions
One package bacon cooked and crumbled


Directions:

Combine all ingredients. Mix thoroughly. Refrigerate. Enjoy!

*if making cheese for the first time, I suggest cutting this recipe in half.

Romans 1:16 --For I am not ashamed of the gospel of Christ: for it is the power of God unto salvation to every one that believeth; to the Jew first, and also to the Greek.

2. I Know It.

The importance of gaining knowledge is an eternal principle.

All truth and knowledge is important, but amidst the constant distractions of our daily lives, we must especially pay attention to increasing our gospel knowledge so we can understand how to apply gospel principles to our lives.

3. I Live It.

We live the gospel and become “doers of the word” by exercising faith, being obedient, lovingly serving others, and following our Savior’s example.

4. I Love It.

This feeling comes as we feel the Holy Ghost witnessing to us that we are children of our Heavenly Father, He is mindful of us, and we are on the right path.

One of the most effective but sometimes difficult gospel principles to apply is humility and submission to the will of God.

Gun control, Media, Socialism


I haven’t watched the news since November 6. I’m still quite distraught over the election. Everything and everyone I voted for lost. Why? The simple answer is stupidity/ignorance and the moral degradation of society.

I read a news snippet on the Internet today that said that Bob Costas – during a football game yesterday – went on a 90 second rant about gun control. I did not see it. (If I watch TV on Sunday, it’s only BYUTV.) But,  I’m so sick and tired of the liberal media, under the socialist Obama regime, feeding lies to the American people. Why can’t they just broadcast a football game without putting their liberal/socialist spin on things and feeding it to the unsuspecting American public?

Honestly, do you really think it is the gun’s fault that a deranged professional football player committed murder then suicide? From what I’ve read about what Bob Costas said, not much was mentioned about the murder. Only sympathetic things were said about the murderer. Because, heaven knows, if he did not have that gun, he and his girlfriend would still be alive. At least that’s what Bob Costas told everyone. And the sad part is, people actually believe the lies.

Yes, it’s a sad story but put the blame where it lies. Blame the murderer, not the weapon. If somebody wants to murder someone they will find a way to do it. Regardless of the weapon or method they choose.

I have never believed in gun control, nor fully understood the logic behind it. Should we not allow people to purchase knives, or rope, or motor vehicles, or anything that might be used to murder someone? Should we put all of those items on a seven-day waiting period? Should we do background checks on anyone trying to purchase a kitchen knife or an extension cord?  It’s ridiculous.

Just because a gun can be used to kill someone doesn’t mean that it will be. Any more than a knife or rope or car will be used to kill someone just because they can. It is the person that murders, not the weapon.

Government cannot, or I should say should not, regulate every aspect of people’s lives. But it sure seems like that’s what they’re trying to do. Remember the mayor of New York City regulating the size of soda New Yorkers can buy? What happened to agency? Our Heavenly Father’s Plan is that we are able to exercise our agency and then reap the consequences whether good or bad. This is how we learn and grow. Coincidentally, all of us chose this plan before we came to earth.

Socialism is not the Lord’s plan. It is Satan’s plan. This is the promised land. We are supposed to be a free people. But unfortunately, we are steadily becoming a more socialistic country where the government gets bigger and bigger and people become more dependent upon the government. And as a consequence, we become less free.

Gun control is just one example. If you don’t believe me, listen to the words of a prophet.

The following quotes are taken from: Secret Combinations by Elder Ezra Taft Benson of the Council of the Twelve Apostles. General Conference, October 1961.

There are those who recommend that the clash between communism and freedom be avoided through disarmament agreements. Abolishing our military strength and adopting an unenforceable contract as a substitute to protect us would go down in history as the greatest mistake free men could make in a time of peril.

President McKay declared:

“Force rules in the world today, consequently, our government must keep armies abroad, build navies and air squadrons, create atom bombs to protect itself from the threatened aggression of a nation which seems to listen to no other appeal than compulsion.” (Ibid., p. 304.)

This parallels the historic statement by George Washington when he vigorously warned:

“There is a rank due the United States among the nations that will be totally lost by the reputation of weakness. If we would avoid insult we must be able to repel it, if we would secure the peace it must be known that we are at all times ready for war.”

It is Obama’s socialistic agenda and therefore the liberal media’s agenda also, including Bob Costas, to disarm this nation. Those of you who have seen Obama’s America 2016 know this. Over the past four years Obama has decreased our nuclear capabilities. I can’t remember the exact numbers but it is a lot. At the same time, Iran is increasing their nuclear capabilities by making nuclear bombs as we speak. This is just one example of Obama’s socialistic/communistic agenda.

Continuing quotes from Pres. Ezra Taft Benson’s talk:

“What is the official position of the Church on communism? In 1936 the First Presidency made an official declaration on communism which has never been abrogated. I quote the concluding paragraph:

“We call upon all Church members completely to eschew communism. The safety of our divinely inspired constitutional government and the welfare of our Church imperatively demand that communism shall have no place in America”

“We must ever keep in mind that collectivized socialism is part of the communist strategy. Communism is fundamentally socialism. We will never win our fight against communism by making concessions to socialism. Communism and socialism, closely related, must be defeated on principle. …”

And my favorite quote from Pres. Benson’s 1961 talk:

“No true Latter-day Saint and no true American can be a socialist or a communist or support programs leading in that direction. These evil philosophies are incompatible with Mormonism, the true gospel of Jesus Christ.”

So, you Obama voters, don’t take my word for it. A prophet of God has stated that if you support socialism or communism or any programs leading in that direction-- i.e. Obama, or gun control, etc.-- then you are not a true American or a true Latter-Day Saint.

That’s my two cents.

The One Pure Defense -- Pres. Boyd K. Packer

I have heard bits and pieces of this talk here and there and I have always wanted to read it. I have highlighted in bold the parts that stood out to me. This is not the entire talk, it is very long. It is pretty much the second half of the talk though. If you would like to read the entire talk you could look it up. I hope you enjoy it as much as I did.

…With an individual testimony, they will be safe in the world.
 

…We know also that the being from the unseen world who con­fronted the boy Joseph in the Sacred Grove is always near, for as Peter said, “Be sober, be vigilant; because your adversary the devil, as a roar­ing lion, walketh about, seeking whom he may devour” (1 Peter 5:8).
 

Now, by moral and social and political and even intellectual stan­dards, we seem to be losing.

 
But mankind also knows that in the final windup scene Satan cannot win.
 

The world is spiraling downward at an ever-quickening pace. I am sorry to tell you that it will not get better.


It is my purpose to charge each of you as teachers with the respon­sibility—to put you on alert. These are days of great spiritual danger for our youth.


Morally Mixed-up World

 
I know of nothing in the history of the Church or in the history of the world to compare with our present circumstances. Nothing happened in Sodom and Gomorrah which exceeds in wickedness and depravity that which surrounds us now.

 
Words of profanity, vulgarity, and blasphemy are heard every­where. Unspeakable wickedness and perversion were once hidden in dark places; now they are in the open, even accorded legal protection.
 

At Sodom and Gomorrah these things were localized. Now they are spread across the world, and they are among us.
 

I need not—I will not—identify each evil that threatens our youth. It is difficult for man to get away from it.


The First Line of Defense

You, with the leaders and teachers in the priesthood and auxiliaries, are not the first line of defense. The family holds that line. Satan uses every intrigue to disrupt the family.

 
The sacred relationship between man and woman, husband and wife, through which mortal bodies are conceived and life is passed to the next generation, is being showered with filth.

Surely you can see what the adversary is about. The first line of defense, the home, is crumbling.
 

The very purpose for the Restoration centers on the sealing authority, the temple ordinances, baptism for the dead, eternal mar­riage, eternal increase—centers on the family!
 

The Lord placed the responsibility upon parents first, saying: “Inasmuch as parents have children in Zion, or in any of her stakes which are organized, that teach them not to understand the doctrine of repentance, faith in Christ the Son of the living God, and of baptism and the gift of the Holy Ghost by the laying on of the hands, when eight years old, the sin be upon the heads of the parents. . . . And they shall also teach their children to pray, and to walk uprightly before the Lord” (D&C 68:25, 28).


There is “the shield of faith wherewith” the Lord said “ye shall be able to quench all the fiery darts of the wicked” (D&C 27:17).


The Armor Is Fitted at Home

This shield of faith is handmade in a cottage industry. What is most worth doing ideally is done at home. It can be polished in the classroom, but it is fabricated and fitted in the home, handcrafted to each individual.

 
Many do not have support in the family. When that shield is not provided at home, we must, and we can, build it. You and the leaders and teachers then become the first line of defense.


The Prophets Have Warned

We are now exactly where the prophets warned we would be.
 

In preparation for what is coming, the Lord warned, “In conse­quence of evils and designs which do and will exist in the hearts of conspiring men in the last days, I have warned you, and forewarn you, by giving unto you this word of wisdom by revelation” (D&C 89:4).


Moroni spoke to us: “O ye Gentiles, it is wisdom in God that these things should be shown unto you. . . . Wherefore, the Lord commandeth you, when ye shall see these things come among you that ye shall awake to a sense of your awful situation” (Ether 8:23–24).
 

Paul prophesied, “In the last days perilous times shall come” (2 Timothy 3:1), then word by word and phrase by phrase, described exactly what our present conditions are now. He spoke of “blasphem­ers, disobedient to parents, . . . unholy, without natural affection, . . . incontinent, . . . despisers of those that are good, . . . lovers of pleasures more than lovers of God; . . . ever learning, and never able to come to the knowledge of the truth,” and other things (2 Timothy 3:2–4, 7).

 
Could he have described our plight more accurately? Read the prophecy very carefully.

 
The Power of Scriptures

Paul prophesied, also, that things will not get better. “Evil men and seducers shall wax worse and worse, deceiving, and being deceived” (2 Timothy 3:13).
 

Fortunately, he told us what to do about it: “But continue thou in the things which thou hast learned and hast been assured of, know­ing of whom thou hast learned them; and that from a child thou hast known the holy scriptures, which are able to make thee wise unto salvation through faith which is in Christ Jesus. All scripture is given by inspiration of God, and is profitable for doctrine, for reproof, for correction, for instruction in righteousness” (2 Timothy 3:14–16).

 
In His supernal prayer for the Apostles, the Lord said, “I pray not that thou shouldest take them out of the world, but that thou shouldest keep them from the evil. They are not of the world, even as I am not of the world. Sanctify them through thy truth: thy word is truth” (John 17:15–17).

 
A World Spiritually Diseased

Spiritual diseases of epidemic proportion sweep over the world. We are not able to curb them. But we can prevent our youth from being infected by them.

Knowledge and a testimony of the restored gospel of Jesus Christ are like a vaccine. We can inoculate them.
 

Inoculate: In—“to be within” and oculate means “eye to see.” We place an eye within them—the unspeakable gift of the Holy Ghost.
 

Nephi told us that “angels speak by the power of the Holy Ghost; wherefore, they speak the words of Christ. Wherefore, I said unto you, feast upon the words of Christ; for behold, the words of Christ will tell you all things what ye should do” (2 Nephi 32:3; emphasis added).

Narrow Way

It is a very narrow and straight path laid out for you teachers.
 

“Strait is the gate, and narrow is the way, which leadeth unto life, and few there be that find it” (Matthew 7:14).

 
...Activities are like spices and desserts that flavor a balanced meal. These must always be of the standard to reflect the gospel. Do not leave out the nourishing nutrients that build the spirit; it is not the entertainment that protects them.
 

The teaching of the restored gospel of Jesus Christ must not be regarded as just one among your offerings. It is more important than any or all of the activities put together. You may provide them activi­ties, but you must not leave the teaching undone.
 

The auxiliaries have been organized and have the responsibility for most of the activities. Teach your students to be faithful and active in the wards and branches and stakes, to have a deep regard for the priest­hood leaders called to preside over them.
 

I repeat, the way is straight and narrow. You must not wander from it.

 
Have Faith—Courage

When our youth feel surrounded and outnumbered, remember what Elisha told his servant when he saw that “an host compassed the city both with horses and chariots.” The servant was frightened and said, “Alas, my master! how shall we do? [Elisha] answered, Fear not: for they that be with us are more than they that be with them. And Elisha prayed, and said, Lord, I pray thee, open his eyes, that he may see. And the Lord opened the eyes of the young man; and he saw: and, behold, the mountain was full of horses and chariots of fire” (2 Kings 6:15–17).
 

You are not responsible to cure the world’s environment. You can, with parents and priesthood and auxiliary leaders and teachers, send young Latter-day Saints out as leaven into the world, spiritually nour­ished, immunized to the influences of evil.
 

“The glory of God is intelligence, or, in other words, light and truth. Light and truth forsake that evil one. . . . [You are] commanded . . . to bring up your children in light and truth” (D&C 93:36–37, 40).
 

A Defense and a Refuge

“The gathering together upon the land of Zion,” the Lord said, “and upon her stakes, may be for a defense, and for a refuge from the storm, and from wrath when it shall be poured out without mixture upon the whole earth” (D&C 115:6).
 

They need not fear. We need not fear. Fear is the opposite of faith.

 
I have been in the councils of the Church and seen many things. I have seen disappointment and shock and concern. Never once have I seen any fear.
 

Our youth can look forward with hope for a happy life. They shall marry and raise families in the Church and teach their little ones what you have taught them. They, in turn, will teach their children and their grandchildren.
 

Isaiah and Micah prophesied: “It shall come to pass in the last days, that the mountain of the Lord’s house shall be established in the top of the mountains, and shall be exalted above the hills; and all nations shall flow unto it. And many people shall go and say, Come ye, and let us go up to the mountain of the Lord, to the house of the God of Jacob; and he will teach us of his ways, and we will walk in his paths: for out of Zion shall go forth the law, and the word of the Lord from Jerusalem” (Isaiah 2:2–3; see also Micah 4:1–2).
 

In our day the house of the Lord has been established in the tops of the mountains, and nations do flow unto it. The word of the Lord—the Old and New Testaments—has gone forth from Jerusalem. Now the law goes forth from Zion. And you are teachers of the law.

 
We Will Not Fail

We will not fail!

 
“How long can rolling waters remain impure? What power shall stay the heavens? As well might man stretch forth his puny arm to stop the Missouri river in its decreed course, or to turn it up stream, as to hinder the Almighty from pouring down knowledge from heaven upon the heads of the Latter-day Saints” (D&C 121:33).

 
It has been fifty-nine years since I sat on that cliff on that tiny speck of an island in the Pacific Ocean and decided to be a teacher. I knew then that a teacher would not be rewarded with wealth; the reward is more lasting.

 
During those years, whole nations have been born and died as the evil one has worked his will. I have seen the borders of Zion enlarged to cover the whole earth (see D&C 82:14; 107:74).

 
I do not know now any more surely that Jesus is the Christ, the Son of God, the Only Begotten of the Father, than I did then as a soldier boy sitting on the cliff on that tiny speck of an island. There is one difference—now I know the Lord.

 
I bear witness of Him and invoke His blessings upon you who teach, as fathers and mothers, as grandfathers and grandmothers, upon your families, upon your classes, upon your work. I bless you that His power and inspiration will follow you in such a way that those who come within your influence will have that protective testimony born within them. I invoke this blessing upon you as a servant of the Lord and in the name of Jesus Christ, amen.

Dad's Horseshoe Cowboys

Well I finally figured out how to add more pictures to my blog. It’s quite a tedious process. But it can be done. You have to shrink the picture to less than 800 x 800 pixels. Anyway, I have been trying to put these pictures of Dad’s Cowboys on here.
Years ago he made some horseshoe cowboys but they got sold at garage sales. So the other day, we were in Coastal Farm Supply and we saw some horseshoe cowboys for sale. So Dad decided he wanted to try to make some once again. He pretty much remembered the pattern from the ones at the store.
I think the ones he made years ago had ball bearing heads and were a little more detailed. I think Dad said that he had a gun in one of the cowboys hands and a saddle in the other. Anyway, Dad is quite the artist. He has made many artistic things out of steel. A couple of mailbox trucks, a tractor, horseshoe cowboys, and of course the ball bearing snowmen that we have displayed in our living room right now.

By requiring exacting standards of construction down to the smallest of details, we not only show our love and respect for the Lord Jesus Christ, but we also hold out to all observers that we honor and worship Him whose house it is.
 
Even though mortal eyes and hands may never see or feel a defect, the Lord knows the level of our efforts and whether we have done our very best.
 
“And inasmuch as my people build a house unto me in the name of the Lord, and do not suffer any unclean thing to come into it, that it be not defiled, my glory shall rest upon it;
“Yea, and my presence shall be there, for I will come into it, and all the pure in heart that shall come into it shall see God.
“But if it be defiled I will not come into it, and my glory shall not be there; for I will not come into unholy temples.” Doctrine and Covenants 97:15-17
 
The high standards of temple building employed by this Church are a type and even a symbol of how we should be living our own lives.
“Know ye not that ye are the temple of God, and that the Spirit of God dwelleth in you?
“If any man defile the temple of God, him shall God destroy; for the temple of God is holy, which temple ye are.” --1 Corinthians 3:16-17
We are each made of the finest materials, and we are the miraculous result of divine craftsmanship.
The temple standard that we are asked to meet is not that of perfection, although we are striving for it, but rather that we are keeping the commandments and doing our best to live as disciples of Jesus Christ.

Reminder! Stone Stuff the Turkey 10K

Reminder!
The first annual (maybe) Stone Stuff the Turkey 10K will be held Thanksgiving day -- Thursday, November 22, 2012 at 9:30 AM.

The race will start and end at the top of our driveway. The turnaround will be marked.

There will also be a race to the mailbox and back approximately 1 mile for those who do not want to run a 10K.

Also, for the little kids we will do a race to the gate and back -- approximately half a mile.

Don't forget your T-shirts! Come one, come all!

Ode to Mitt Romney


I’m still having a hard time coping with the results of the recent election. I don’t believe that Mitt Romney actually lost the election. I believe it was corruption and voter fraud that tipped the scales to Obama.

Just one example. My brother’s running buddy told him that one of his relatives went to vote at a polling place in Ohio. Upon entering the polling place an election official, of some sort, asked him which party he supports. When he told them Republican, he was told he would have to find another place to vote. Unbelievable!

 But that’s not what this blog post is about. I was thinking about Mitt Romney and his family. I was thinking about all of the hatred and anger directed at them. I don’t know Mitt Romney or his family. Everything I know about them is what I’ve gathered from the media. But I do feel a deep gratitude to the Romneys for their sacrifice and love for me as a citizen of the United States of America.

 Even though (sadly) Mitt Romney will not be the next President of the United States of America, I know that he and Ann worked tirelessly during the campaign so that they might save this nation from the brink of destruction. I know they were motivated by love of country, not revenge. I know they felt a deep sense of responsibility to help this country get back on the right path. But unfortunately, they will not get the chance to help us.

I don’t know why there is so much anger and hatred directed at Mitt Romney. As far as I’m aware, he has done nothing but try to help people. Much of his life has been dedicated to serving others. As far as being a rich businessman goes, since when is that a bad thing? In the America I know, we applaud success.

I didn’t grow up wealthy. In fact, my parents struggled quite a bit. My dad was unemployed for a time and we never had much money. I was raised in a duplex. Good old 192! We never thought of wealthy people as evil or the bad guy. Where did that come from? Good for them if they are successful in business. Isn’t that the type of person you would want running your country?

As I mentioned, I don’t know anything about Mitt Romney except what I gathered from the media. Some things I do know about him:

1.       He is a brilliant businessman.

2.       He saved the 2002 Olympics.

3.       He is a returned missionary.

4.       He served as bishop.

5.       He served as stake president.

6.       He and his wife, Ann, raised five boys.

7.       All of his boys served missions.

From the above list I can conclude that Mitt Romney has helped countless people. To serve as a bishop and stake president, and even as a missionary, requires dedication, hard work, much sacrifice, and a love for the people you are serving. I’m sure many stories could be told about Mitt Romney and his service to others. But, they never will be because that’s not what a good disciple of Christ does. You don’t  gloat about serving others.

In fact, I found out something that I didn’t know until last week. Ann Romney’s brother is one of the men who donated  a lobe of one of his lungs to my cousin. It saved her life. That was 13 years ago, I think. Since then, my cousin has been able to graduate from college and get married. And live a somewhat normal life. Those are the kinds of people the Romneys are. Those are the kinds of stories you never hear about, unless it is through the recipient of the selfless service.

I am really sad that Mitt Romney will never get the chance to help our nation by becoming the next president of the United States. In fact, I was so distraught last week that I shed tears of pain almost every day over it.

I know Mitt Romney would have done an excellent job in helping our economy recover and leading us back down the right path. I think he would have been one of our best presidents.  On the same level as Ronald Reagan and Abraham Lincoln. It wouldn’t have been easy but at least he could have gotten us on the right path. I know he would have worked hard and done everything he could to help this nation.

 Ann Romney would have been an exceptional first lady. She would have brought back dignity and elegance to the White House. The Romneys would have actually been good examples for the citizens of the United States to look up to and try to emulate.

To me, the choice was obvious. It really was about good versus evil. Unfortunately, evil prevailed. Our nation is now continuing on a downward spiral toward socialism. There’s nothing we can do but weather the storm. I did all I could do to prevent it, I voted. The second coming is being hastened.

Mitt and Ann Romney went above and beyond their civic call of duty. They are true patriots. And I applaud and thank them for their efforts.
